It’s fair to say that what Mike Thomson and his team at MFC don’t know about cheese, probably isn’t worth knowing. Having travelled round the UK and Ireland for a few months after quitting his uninspiring university course, living out of the back of his car and exhausting his limited funds, Mike returned home tail between legs. He would eventually find his way back into education but this time with a real purpose. He enrolled at the School of Artisan Food in Nottinghamshire and earned his diploma in Dairying. During that year Mike grabbed every learning opportunity presented to him. In his own words “I became Mr Cheese for a year, asking cheesemakers if I could work with them on weekends and during holidays."
Having gained experience with a wide range of cheesemakers, Mike finally felt ready to launch his own company and in 2013, Mike’s Fancy Cheese was born, with the help of some crowdfunding from friends, family and early supporters of his cheeses. Growing from strength to strength and with the introduction to market of his highly renowned ‘Young Buck’, a cheese now featured on the most decadent of cheese boards nationwide, Mike has cemented himself at the heart of the artisan food scene in Ireland. It was a natural progression therefore that he would go on to open his own cheesemongers on Little Donegall Street in Belfast, drawing from his industry connections to showcase other great cheesemakers from across the island.
Mike’s enthusiasm for quality produce is evident and his love of good beer is even clearer hence the perfect combination of beer and cheese pairing. If you’d like to know which beers will work best with certain types of cheeses and how flavours can either complement, contrast or create something bigger than the sum of their parts (the 2+2=5 effect) then this is the event for you!

The night will see 5 of our beers paired with 5 of the finest cheeses Ireland has to offer. Expect an intimate and conversational gathering with fellow food and beer lovers. Tickets are limited to just 30 so book quickly to avoid missing out.
