The spring equinox. Work on our new 10HL brewery begins.
It’s a bitterly cold and windy day with whitecaps tearing across the Swilly. Simon and James are on the job early in the day and work begins with clearing the site. Simon should feel fairly at home here — his family, the Morissons, have farmed the adjoining land for generations and he knows every stone in the place.
The site is already fairly clean — just a boundary wall and a tiny stone building need to disappear. The building was once the dog shed but in recent years the pets in the Carton household have upgraded to indoor sleeping quarters. Garrett’s dog Pip will have no regrets as this monument to bygone days vanishes with a few deft swings of the digger’s arm.
